Wet Polished
Wet Polished is a variation of the washed process that involves an additional step to enhance the appearance and potentially the flavor of the coffee beans. After the standard washed process (where coffee cherries are pulped, fermented, and washed), the beans undergo an extra 'polishing' step while they are still wet. This is typically done using a machine that gently tumbles the beans, removing any remaining silver skin (a thin layer on the bean) and smoothing the surface of the beans. The polishing can also remove any remaining traces of mucilage. Proponents of this method claim it results in a cleaner cup profile with enhanced clarity of flavor. Wet polished coffees often exhibit bright acidity, clean and crisp flavors, and a lighter body compared to standard washed coffees. This method is less common than standard washing and is sometimes used for high-grade specialty coffees where producers want to ensure the cleanest possible flavor profile.
